Fresh Golden Yellow Croaker Whole Fish

Yellow croaker with a golden-yellow back that fades to a bright silver belly, a large round eye and a deeply forked tail. The fish are shown seared and split open on a wooden board with lemon, butter and spring onion alongside, whole on a white plate in a stainless kitchen, and laid in a row on crushed ice with lemon and rosemary.

The flesh is fine, white and delicately sweet, and the fish are small enough to cook whole. Steam them with ginger and spring onion, pan-fry them until the skin crisps, or braise them in soy.
