Fresh-Frozen Mantis Shrimp And Prawns

Mantis shrimp with their segmented armour intact, split along the back to show the deep orange roe packed inside the shell. They are shown split and heaped on a white plate on a wooden board, stacked on a steel tray beside bottles of sauce, and the final image shows large prawns split the same way and topped with roe and a little seasoning.

The meat is sweet and firm, and the roe is rich and creamy. Steam or grill them briefly, or pan-fry the split halves cut-side down and finish with garlic and chilli.
