Fresh-Frozen Whitebait Ready To Cook

Small, slender whitebait, almost translucent and pearl-white with a faint silver sheen along the flank and a dark eye at the head. They are shown laid out in neat rows on a wooden board, again on a white plate and a steel plate in a working kitchen, and once more pan-fried to a light golden finish on a cream plate with spring onion.

The fish are tender and mild with a clean, sweet flavour. Dust them in flour and fry until crisp, fold them into an omelette, or drop them into a light broth at the end of cooking.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
