Fresh-Frozen Golden Stuffed Sea Stars

Five-armed sea stars in orange and gold, the surface raised into a dense, beaded texture that runs out along every arm. Several are split open and packed with a green filling of peas and seasoned paste, the cut edges showing the pale inner flesh. They are shown on a white plate on a dark table, on a wooden board beside small bowls, and again on a steel bench with lengths of spring onion and sliced chilli scattered around.

Simmer them slowly in a broth or soup so they flavour the liquid, or steam them whole and dress them with soy and spring onion.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
