Large raw prawns, whole with heads and long antennae on, their shells a wet slate blue on some and pale tan on others, with dark eyes and fine red-tipped legs. They are shown laid across a wooden board, in a row on a steel bench, and heaped on a white plate over paper towel with a small bowl of dressing behind them.
The flesh is firm and sweet. Grill or pan-fry them hot and fast, boil them for a cold platter, or peel and add them to a stir-fry.
