Jellyfish cut into wide ribbons and thicker folded pieces, translucent and pale amber shading to white, glossy and jelly-like where the surfaces catch the light. They are shown heaped on a white plate on a bench, again on a white plate with a scatter of green garnish and a thin dressing, and once more in a shallow bowl on a wooden board, dressed with soy, sesame seeds, spring onion and a little mustard.
The pieces keep a firm, springy crunch and soak up whatever they are dressed with. Serve them chilled as a cold dish, or drain and toss with cucumber, black vinegar and sesame.
