Whole sea snails cooked in their shells, each one a rounded spiral marked with a mottled brown and white pattern and carrying a glossy sheen. They are packed together in a shallow white bowl in a reddish-brown sauce, shown again as a loose heap on a white board beside a sink, and once more on a pale bench where the shells sit open with the meat showing and a few pieces of spring onion and chilli cling to them.
The meat is firm and slightly chewy with a sweet, savoury finish, and the sauce clings to the mouth of each shell. Serve them as they are, or warm them through with a little chilli and garlic.
